Ricotta and Spinach Dumplings In Napoli Sauce

Ingredients for Dumplings

  • 1 egg

  • 100 grams washed baby spinach leaves

  • 2 tablespoons olive oil

  • 500 grams drained ricotta cheese

  • 3 spring onions finely chopped

  • 1 /2 cup plain flour

  • 1/2 teaspoon salt

  • pepper to taste



Method


Fry spring onions and spinach leaves in olive oil, set aside to cool

In a large bowl, place ricotta cheese, egg, flour, salt and pepper and mix well

Mix the cooked spinach into the ricotta mixture



Ingredients for Napoli Sauce


690 grams passata sauce

1/2 cup red wine

1/2 cup water

3 spring onions chopped finely

1 tablespoon minced garlic

1/2 cup chopped fresh basil leaves

2 tablespoons olive oil

1/2 cup grated parmesan cheese

salt and pepper to taste


Method

Place spring onions and garlic in oil and fry till soft

Pour in the passata, red wine and water and bring to boil

Add the basil leaves , season with salt and pepper and simmer for 15 minutes


Take a tablespoon of the ricotta mixture and form into a dumpling and place in the sauce , repeat this till all the ricotta mixture is used ,sprinkle with the parmesan cheese and cook in oven at 200 degrees celsius for 30-40 minutes till top is browned

Serve with a salad , Enjoy!!
