Roast Pumpkin Salad with Pumpkin Seeds

Ingredients
2 tablespoons olive oil[for roasting pumpkin]
2 tablespoons olive oil for dressing
1 tablespoon balsamic vinegar
1 tablespoon maple syrup
salt and pepper
800 grams of peeled and cubed pumpkin[large cubes]
2 handfuls of washed baby spinach leaves
1/4 cup pumpkin seeds, gently roasted
60 grams crumbled feta cheese
Method
Place oil in a large baking dish and place the pumpkin pieces, season with salt and pepper
roast for about 20 mins at 180 degrees Celcius
Once cooked seta aside to cool
Place extra oil , balsamic vinegar , maple syrup , salt and pepper in a boil, mix well
In a large serving dish, arrange the spinach leaves, then top with pumpkin, sprinkle seeds on top then add feta cheese, pour the dressing over it all , ready to serve!
