Roast pumpkin with yoghurt sauce

Ingredients
1/2 Butternut pumpkin thickly sliced with skin on
1/2 cup plain yoghurt
1/2 cup olive oil
2 brown onions thinly sliced
2 tablespoons roasted pepitas
1 tablespoon fresh lemon juice
1 teaspoon minced garlic
1/2 teaspoon salt
1 tablespoon chopped fresh mint
1/2 teaspoon paprika
Method
In a frypan , place 2 tablespoons of oil and fry the onions in it gently stirring constantly till they are soft and golden brown will take about 20 minutes, set aside
In an oiled baking dish place the pumpkin and sprinkle a bit of salt on it,and roast at 200 degrees Celsius for about 30-40 minutes till soft and golden
Mix the yoghurt with the garlic, salt and lemon juice
In a dish place a bit of the yoghurt on the base , then the pumpkin over it , put remaining yoghurt on top of the pumpkin, then the caramelised onions , scatter the pepitas over it and then sprinkle paprika over it all , top with the mint ENJOY! as a side dish with meat or fish
