Roasted Cauliflower and Pumpkin Vegan Salad

Ingredients
1/4 cup olive oil [extra oil may be needed]
1 large brown onions chopped finely
1 teaspoon ground cumin
2 teaspoons curry powder
1 teaspoon salt
1/2 cup vegan mayonnaise
juice of 2 limes
1 tablespoon honey
1 teaspoon minced garlic
1/2 head of cauliflower chopped into medium sized florets
1/2 a medium sized butternut pumpkin chopped into medium sized chunks
2 tablespoons toasted pepitas
1 tablespoon sultanas
Method
In a large oiled baking dish place coarsely chopped cauliflower and pumpkin and sprinkle remaining oil , salt , curry powder and cumin
Fry onion in little oil till soft and golden , will take around 8 minutes, set aside
Roast for about 30-40 minutes in a slow oven till vegetables are soft and golden
In a bowl mix mayonnaise, garlic and lime juice and honey
Place cooked vegetables in a large bowl ,. sprinkle the fried onion, sultanas and pepitas over the roasted vegetables and pour the mayonnaise sauce over it , ready to serve !
