Sago Pudding with drunken cherry sauce

Ingredients for pudding


  • 1/3 rd of a cup Tapioca pearls [sago]

  • 2 cups water

  • 400g coconut cream

  • 3 tablespoons sugar[adjust to taste]


Method for pudding



In a large bowl place water and tapioca and soak overnight or soak for about 2 hrs


Place this in a large saucepan on a low heat add the coconut cream stirring continuously for about 5 minutes then add the sugar stirring for another 5-10 minutes once the pearls are translucent they are cooked , set aside till cooled slightly and pour into serving dish, and top with fruit or the cherry sauce as desired



Ingredients for cherry sauce


I jar 670 grams pitted morello cherries in syrup

3-4 tablespoons sugar

1 cup red wine

1/4 cup water

2 tablespoons cornflour


Method for Cherry Sauce


Place cherries with syrup into a saucepan and bring to the boil, add the wine and boil for another 5 minutes stirring continuously, reduce the heat and add the sugar once dissolved add the cornflour that has been dissolved in the 1/4 cup water, stir till thickened, 1-2 minutes , set aside to cool and pour over the sago pudding, ready to serve !
