Savoury Sweet Potato Tart

Ingredients for Shortcrust pastry
200 grams plain flour
100 grams softened butter
3 tablespoons cold water
1/2 teaspoon salt
extra flour to roll out dough
20 cm fluted tart tin , greased
Ingredients for Filling
1 medium sized sweet potato
2 red onions
8 fresh sage leaves washed and chopped finely
300 mls cream
2 eggs
1/2 -1 teaspoon salt
1/4 teaspoon pepper
Method
In a food processor place flour ,salt and butter and and then gradually add the water , once done roll into a ball shape and place covered in refrigerator for 30 minutes
Now place the dough into the tart tin and place beans on the pastry base and bake in a 200 degrees oven for 20 minutes once cooked take out and cool and remove the beans
Place chopped sweet potato and the red onions in a baking dish and bake for 40 mins at 200 degrees celsius
Once cooked , set aside to cool, then peel and chop the vegetables and mix together, add some salt and pepper and the sage
Place into the base of the tart
Whisk together the cream and eggs and add a bit of salt
Place in oven at 200 degrees celsius and bake for 40-50 mins till top is golden and is firm to touch
Set aside to cool slightly and serve with a fresh green salad ,can be eaten warm or cold , Enjoy!
