Savoury Vegan Pancakes

Ingredients


1/4 cup olive oil [extra oil may be needed]

2 cups chopped mixed fresh vegetables [I used grated carrot ,cabbage and capsicum]

2 spring onions finely sliced

1 teaspoon salt

2 tablespoons extra oil

1 1/2 teaspoons baking powder

1 1/2 cups plain flour

450 grams silken tofu blended with 1 cup cold water, so it is a smooth paste

chutney or vegan mayonnaise to serve with



Method

In a large bowl mix flour salt and baking powder,

Add the tofu, iff it is too dry add more water till it is a smooth consistency

Now add the vegetables ,and extra oil , mix in well

Fry in an oiled frypan

Will take about 8 minutes to fry each batch till golden, Serve with mayonnaise or chutney
