Scalloped vegetables

I baking dish about 20cmx30cm size

preheat oven to 200 degrees C








Ingredients


1/4 cup oil

1 large brown onion peeled and diced

1 tablespoon minced garlic

3 large potatoes cleaned and thickly sliced

2 large carrots cleaned and sliced thickly

2 large zucchini washed and sliced thickly

300 ml bottle cream

100 grams grated parmesan cheese

1-2 teaspoons salt [to taste]

pepper to taste







Method

In a frying pan place half of the oil and gently fry the onions till soft and starting to brown and then add the garlic and fry for another minute and set aside

In a large saucepan place the potatoes and carrots and cover with water, bring to the boil and then simmer , till vegetables are soft ,when pricked with a fork

Once cooked drain them

In a baking dish add the remaining oil and line the base with half of the fried onion mix , then cover with half the potatoes and carrots and place half of the zucchini

Repeat this process with the onions then vegetables , finishing with zucchini as the final layer

Sprinkle with salt and pepper

Pour the cream over the vegetables

Sprinkle with the cheese

Place in a warm oven and cook for about 30-40 minutes

Check iff cooked by pricking with a fork, iff zucchini is soft and topping is brown , then ready to eat

Serve with fish, or a meat of your choice, and / or a salad
