Serbian Bean and Ham Soup



SERVING SIZE: 8- 10

PREP TIME: 20 mins

COOK TIME: 1 hr in pressure cooker, 6 hrs in slow cooker and 2 hrs on stove top

TOTAL TIME: 1 hr 20 mins [pressure cooker]



Ingredients


1/4 cup oil

1 larger brown onion peeled and diced

2 medium carrots peeled and diced

4 celery stalks trimmed and sliced

2 tablespoons minced garlic

1x400 g can chopped tomatoes

500 grams dried cannellini beans rinsed

8 cups water

1 teaspoon smoked paprika

2-3 teaspoons salt to taste

1 teaspoon pepper

  • 1 large smoked ham hock [about 1 kg]

  • 1 chorizo sausage diced









Method

In a deep saucepan fry onions in oil till soft


Add carrots and celery and continue gently frying for another 10 mins till soft ,


Add the garlic fry for one minute, add the remaining ingredients , stir well and put to cook


In a pressure cooker cook for 1 hour

In a slow cooker cook for 6 hrs on high

On the stovetop bring to the boil and then simmer for approx 2 hrs , stirring frequently and add more water iff needed , cook till beans are soft and meat is falling of the bone

Once cooked remove the bone and chop the ham and stir through the soup


Serve with fresh crusty bread
