Singapore Noodles

Ingredients


  • 200 grams singapore noodles

  • 1/4 cup oil

  • 1 tablespoon minced ginger

  • 1 tablespoon minced garlic

  • 2 spring onions thinly sliced

  • 2 teaspoons soy sauce

  • 2 tablespoons sake

  • 1 tablespoon sesame oil

  • 200g finely chopped chinese roast pork [available at supermarket deli sections]

  • 3 cups finely shredded white cabbage

  • 2 eggs whisked and fried in oil and chopped into strips

  • 1-2 tablespoons curry powder [according to taste]

  • 300 grams frozen cooked prawns [tails off and defrosted]

  • 1 medium sized carrot washed and grated

  • 1/2 -1 cup chicken stock

  • 1 teaspoon white sugar


Method


In a large frypan add oil , garlic and ginger , lightly fry

Add the roast pork and prawns and fry for 30 seconds

Add the wine, cabbage and carrots and fry for 20 seconds

Add the noodles and stock

Keep stirring till all are blended well and noodles are softened, you may want to add more stock iff noodles are a bit hard

Add the curry powder stirring it through thoroughly

Add all the remaining ingredients , warm them all thoroughly

Taste it, may need more soy or salt, when happy serve !
