Soba noodles with prawns

Ingredients
3 tablespoons olive oil
1/2 tablespoon minced garlic
3 tablespoons sweet chilli sauce
1 tablespoon lime juice
1 tablespoon fish sauce
270 gram pack soba noodles
2 cups green beans tailed and chopped in halves
1 cup peas
1/2 cup chopped fresh mint leaves
1/2 cup chopped fresh coriander
1 kg fresh prawns, shelled and deveined [leave tails intact]
Method
In a large saucepan boil noodles for 3 minutes, then add the beans and peas boil for another 1 minute then drain and set aside
Place prawns in a large bowl and pour 2 tablespoons of oil and 2 tablespoons of chilli sauce over them and mix well
In a large frying pan pour the 1 tablespoon oil and fry the prawns till turned pink, set aside
In a small bowl mix the lime juice , chilli sauce and fish sauce
Arrange the noodles with the beans and peas on a large platter
Scatter the prawns over the noodles
Top with the mint and coriander leaves and pour the sauce over everything, ready to serve!! Enjoy!!
