Spaghetti Bolognese

Ingredients
1/4 cup olive oil
1 large brown onion chopped finely
2 teaspoons minced garlic
3 medium carrots finely chopped
4 sticks celery finely chopped
2-4 teaspoons salt to taste
pepper to taste
1 kg lean minced beef
200 grams bacon finely chopped
2x400g tinned tomato pieces
1/2 cup chopped fresh parseley
1/2 cup chopped fresh basil
1 cup red wine
2 dry bay leaves
2 cups water , add more as needed
Method
In a large pot add the oil and onions and fry gently , till soft , add the garlic fry for another minute
Add the carrots and celery and cook till softened.
Add the bacon and cook till starts to brown
Add the beef and cook till moisture has evaporated , will take about 20 minutes
Add the remaining ingredients , bring to the boil and then simmer gently for about 2.5 hours
Keep monitoring and stirring and add more water iff needed
Once cooked check the taste, may need more salt
Serve with your favourite pasta and top with grated parmesan cheese .
Can use this to make lasagna.
I make large amounts of this and freeze in packs for later use , Enjoy!
