Spicy Cabana Casserole

Ingredients


  • 1/4 cup oil

  • 300g cabana sausage sliced

  • 1 brown onion finely chopped

  • 1 red capsicum diced

  • 1 green chilli chopped [optional]

  • 2 tomatoes diced

  • 1 teaspoon salt [to taste]

  • pepper to taste







Method

In a frypan place the oil , onions, capsicum and chilli

Fry gently for about 10-15 minutes till vegetables are



soft and lightly browned


Add the tomatoes and cook till soft about 5 mins

Add the sliced cabana sausage , fry for another 10 mins till lightly browned and add salt to taste

Delicious served with buttered toast and a poached egg
