Sri Lankan Style Chicken Curry

Ingredients
One third cup oil
1.5 kg chicken pieces
2 brown onions finely chopped
3 tablespoons roasted Sri Lankan curry powder
1 tablespoon paprika
1 cinnamon stick
4 teaspoons minced ginger
4 teaspoons minced garlic
1 tablespoon ground cardamon
1x 400 gram tinned chopped tomatoes
1 tablespoon ground coriander
1 tablespoon ground cumin
1 x 400 g coconut milk
1/2 teaspoon turmeric powder
1 teaspoon brown sugar
1 tablespoon apple cider vinegar
1 bunch chopped fresh coriander
2-3 teaspoons salt [according to taste]
6 green cardamon pods
10 curry leaves
1 cup water
2 red chillies finely sliced
Method
Heat oil in a large solid frypan.
Add the onion and fry gently till softened
Now add the garlic , ginger and chopped chillies
Fry gently , for about 30 seconds
Add the curry powder, paprika, curry leaves, cumin , coriander , cinnamon stick, cardamon pods, turmeric, ground cardamon, salt, fry for about 30 seconds till fragrant
Add the chicken pieces , fry for about 2 minutes
Add the coconut milk, fresh coriander, tomatoes, water, vinegar, sugar, stir through thoroughly, bring to the boil and let simmer for about 50 minutes ,stirring constantly, checking to see if chicken is cooked through, taste for salt add more iff needed .
Once cooked served with roti and or rice, Enjoy!!
