Strawberry Cake

Preheat oven to 180 degrees Celsius

Grease a round 22 cm cake tin


Ingredients


  • 250 grams butter, softened

  • 1 1/2 cups self raising flour

  • 400grams fresh strawberries hulled, washed, and cut in half

  • 2 eggs lightly beaten

  • 1/4 teaspoon salt


  • 1 teaspoon vanilla essence

  • 1/2 cup milk

  • 3/4 cup caster sugar and 1 tablespoon extra sugar

  • icing sugar to dust [approx 1 tablespoon]









Method


Sift the flour with the salt and set aside

In another bowl beat the butter till soft and gradually add the sugar till all combined and have a smooth creamy texture

Add the eggs and vanilla beating well and then add half the flour , mix in well on low speed with beater then add the milk , mixing well

Add the remaining flour , mixing well

Pour into prepared cake tin ,place the strawberries on top ,with cut side in the batter and sprinkle the extra caster sugar on top and place in the oven , it will take about 1 hr to cook, once skewer inserted comes out clean it is ready

Iff it looks like it is browning too much whilst cooking ,reduce temperature by 5-10 degrees celsius

Once cooked , place on cake rack to cool

After about 2 hours dust with about 1 tablespoon of icing sugar and delicious served with a dollop of cream on the side Enjoy!!
