Sweet Chilli Jam

Ingredients


  • 10 red chillies topped and chopped

  • 4 red capsicums seeded and chopped

  • 1 brown onion chopped

  • 1/2 cup red wine vinegar

  • 600 grams caster sugar

  • 3 garlic cloves , chopped

  • 1x 400 gram tinned chopped tomatoes





Method

Place all ingredients [except the sugar] in a food processor and blend till fine.


Place the mixture in a heavy based saucepan, add the sugar and stir till dissolved


Bring the mixture to the boil and then simmer gently occasionally stirring


Time for 60 minutes and check iff the mixture has thickened , keep checking every 5- 10 minutes till the mixture is thick and syrupy


When ready, place in sterile jars, let cool a bit and then seal, place in a dark cupboard , will keep for 3 mths, once opened refrigerate the jar.
