Tasty Rice


SERVING SIZE: 4

PREP TIME: 10 mins

COOK TIME: 15 mins

TOTAL TIME: 25-30 mins









Ingredients




2 tablespoons olive oil

1 small brown onion chopped finely

2 teaspoons minced garlic

1 cup long grain rice

2 cups boiling water

2 teaspoons stock powder [I used chicken stock]

salt and pepper to taste








Method

In a large pot add the oil and onions and fry gently , till soft , add the garlic fry for another minute

Add the rice and fry for about one minute

Add the water and stock powder

Bring to the boil, adjust salt and pepper

Then simmer the pot , placing the lid on it

Simmer for 10 minutes

Switch the cook top off, place a tea towel under the lid and let it sit for 15 minutes

Rice should be ready now

Serve as a side to many dishes, meat, fish or vegetables
