Thai Chicken and Pineapple Curry

Ingredients
600 grams skinless and boneless chicken thighs sliced thinly
1x400g coconut cream
2 heaped tablespoons red curry paste
1 tablespoon minced garlic
3 tablespoons fish sauce
1 cup pineapple pieces
3 kaffir lime leaves thinly sliced
1/3rd red capsicum thinly sliced
1/3 rd yellow capsicum thinly sliced
1/2 brown onion finely diced
2 cups of mixed asian vegetables , bamboo shoots , baby corn , bean shoots
2 tablespoons white sugar
Method
In a large frypan add red curry paste and garlic and fry gently for 2 minutes
Add the coconut cream and keep frying for another 1 minute
Add the rest of the ingredients except capsicum and pineapple and stir through and cook for about 10-15 minutes till chicken is cooked
Add the capsicum and cook for another 10 minutes
Once all cooked, stir through the pineapple pieces
Ready to serve with steamed rice. Enjoy!!
