Tikka Masala Fish Curry

Ingredients
1/4 cup olive oil [extra oil may be needed]
1 cup chopped fresh coriander
2 large brown onions chopped finely
2 heaped teaspoons minced garlic
4 tablespoons tikka masala paste
10 curry leaves
1 long red chilli chopped finely
1x400 g tinned chopped tomatoes
1x400 g coconut cream
2 teaspoons salt to taste
800 grams white fish fillets
Method
In a large frying pan add the oil and onions and fry gently , till soft about 5 minutes, add the garlic , curry leaves and chilli and fry for another minute
Add the tikka curry paste and fry for another 2 minutes
Add the coconut cream , stir through and fry for a couple of minutes
Add the tomato , stir through and cook gently for 5 minutes
Add the fish fillets and and the coriander and salt to taster cooker about 8 minutes till the fish is flaky
Serve with rice and /or paratha Enjoy!
