Tomato and Cheese Tart

Ingredients for Shortcrust pastry


  • 200 grams plain flour

  • 100 grams softened butter

  • 3 tablespoons cold water

  • 1/2 teaspoon salt

  • extra flour to roll out dough

  • 20 cm fluted tart tin , greased

Ingredients for Filling

  • 375 grams ricotta cheese

  • 150 mls cream

  • 2 eggs

  • 1/2 teaspoon salt

  • 2 large tomatoes thickly sliced

  • 2 tablespoons oil

  • 2 teaspoons thyme



Method


In a food processor place flour ,salt and butter and and then gradually add the water , once done roll into a ball shape and place covered in refrigerator for 30 minutes

Now place the dough into the tart tin and place beans on the pastry base and bake in a 200 degrees oven for 20 minutes once cooked take out and cool and remove the beans


In an oiled frypan place the tomato slices and thyme and fry gently, once cooked set aside

In a large bowl add the cheese, cream and eggs and whisk


Pour the cheese filling into the tart base and bake at 200 degrees for approximately 40 minutes, once cooked , top the cheese with the cooked tomatoes , ready to Enjoy!
