Vegan Beetroot and Potato Salad

Ingredients


  • 3 large peeled and washed potatoes

  • 2 medium size carrots peeled and coarsely chopped

  • 1 cup cooked peas

  • 2 medium sized beetroots cooked and diced

  • 1 cup diced dill cucumbers

  • 1 cup vegan mayonnaise

  • 1 tablespoon white vinegar

  • 1/2 teaspoon salt [adjust to taste]




Method

Boil potatoes, carrots and beetroots


Once soft to a fork inserted , drain, cool and dice all .

In a large bowl mix all the ingredients adjust salt to taste
