Vegan Beetroot and Potato Salad

Ingredients
3 large peeled and washed potatoes
2 medium size carrots peeled and coarsely chopped
1 cup cooked peas
2 medium sized beetroots cooked and diced
1 cup diced dill cucumbers
1 cup vegan mayonnaise
1 tablespoon white vinegar
1/2 teaspoon salt [adjust to taste]
Method
Boil potatoes, carrots and beetroots
Once soft to a fork inserted , drain, cool and dice all .
In a large bowl mix all the ingredients adjust salt to taste
