Vegan Beetroot Leaf Salad

Ingredients
fresh beetroot leaves removed from the beetroot approx 400grams washed and chopped
1/2 teaspoon salt
3 tablespoons olive oil
juice from half lemon
Method
Place leaves in a large saucepan , cover with water and bring to the boil and simmer for about 15 minutes till they are tender when pierced with a fork
Drain the leaves in a colander , discard the water , place cooked leaves in a bowl , salt them and add oil and lemon juice , stir well, taste and adjust salt
Delicious served with fried or grilled fish
