Vegan Mushroom Salad

COOK TIME: 15- 20 mins

TOTAL TIME: 30 mins




Ingredients

  • 120 grams mixed salad leaves, washed, dried and spread over a large platter

  • 2 spring onions trimmed , washed and finely sliced and sprinkled over the lettuce leaves

  • approx 250 grams mushrooms washed and sliced [any type]

  • 2 teaspoons minced garlic

  • 2 teaspoons wholegrain mustard

  • 1 tablespoon white vinegar

  • 2 tablespoons olive oil

  • 1-2 teaspoons salt

  • 5 sprigs fresh thyme[remove the stems]






Method

In a frypan put 1 tablespoon oil and garlic and fry for 30 seconds

Add the mushrooms with thyme and fry gently for about 15 minutes, till all the moisture has evaporated and they are lightly browned, sprinkle salt over them and taste


Place the cooked mushrooms over the salad leaves

In a small bowl mix the oil , mustard and vinegar and pour over the mushrooms ready to serve,

Can be served as a main or as a side dish
