Vegan Stewed Peppers

Ingredients
1/4 cup oil
2 medium brown onions peeled and diced
4 red capsicums finely sliced
3 teaspoons minced garlic
1 x 420grams can chopped tomatoes
140 grams tomato paste
1 cup water
1 cup red wine
1-2 teaspoons salt to taste
1/2 teaspoon pepper
Method
In a frypan fry onions with oil till soft , then add garlic , fry for another 1 minute
Add the sliced capsicums and gently fry for about 30 minutes till soft
Add the tomato pieces with the liquid from the can and the tomato paste
Add the water and wine and cook gently for another 20 minutes till most of the liquid evaporates , season with salt and pepper to taste
Can use as a side dish, can use it as a topping on bruschetta, add as a filling to omelettes, many options! But delicious with fresh bread!
