Vegan Vegetable Soup

Ingredients
1/4 cup oil
1 large brown onion peeled and diced
2 medium carrots peeled and diced
2 celery stalks trimmed and sliced
2 tablespoons minced garlic
1x400 g can chopped tomatoes
1 cup peas
2 cups diced pumpkin
2 large zucchini diced
150 grams spinach
1/2 cup fresh chopped parsley
2 bay leaves
1 tablespoon vegetable stock powder
3 tomatoes diced
8 cups water
1 tablespoon tomato paste
1 tablespoon smoked paprika
2-3 teaspoons salt to taste [to taste]
1 teaspoon pepper
Method
In a deep saucepan fry onions, carrots and celery in oil till soft ,add the garlic cook for 1 minute
Add all the remaining ingredients bring to boil and simmer gently for 1.5 hrs with lid on,
Once cooked adjust salt and pepper to taste and serve with fresh crusty bread
