Vegetable Pancakes

Ingredients for Batter


  • 2/3rds cup plain flour

  • 1/3rd cup cornflour

  • 3 eggs lightly beaten

  • 1/2 cup warm water

  • 1 tablespoon chicken stock powder

  • salt and pepper to taste

  • oil for frying about 1/2 cup


Ingredients for Vegetable Filling

  • 1/2 cup finely chopped cabbage

  • 1 small carrot ,grated

  • 1/2 cup corn kernels

  • 3 spring onions finely sliced

  • 1 bunch asparagus finely sliced

  • 1 cup of chopped cauliflower

Ingredients for Topping

  • 1/2 cup mayonnaise

  • 1/4 cup sriracha sauce


Method


Dissolve the stock powder in the warm water, then stir in the beaten eggs

Add the rest of the batter ingredients and combine well

Now add all the vegetables into the batter, mix well and lightly season

Make pancakes the size of 2 tablespoons each and fry gently in oil, will take several minutes, ensure they are lightly browned on each side

To serve top with mayonnaise and some sriracha sauce Enjoy!!
