Vietnamese Salad

Ingredients for Vegetables


  • 1/4 of a lettuce finely shredded

  • 1 small carrot shredded

  • 3 spring onions finely sliced

  • 1 cup bean shoots

  • 1/2 cup chopped fresh coriander

  • 1/2 cup chopped fresh mint leaves

  • 1/2 cup crushed roasted peanuts


Ingredients for Dressing

  • 3 tablespoons fish sauce

  • 3 tablespoons rice wine vinegar

  • 2 tablespoons brown sugar

  • juice from 2 limes

  • 2 red chillies finely sliced

  • 3 garlic cloves finely chopped

  • 2 tablespoons oil


Method


Place all salad vegetables on a plate and top with the peanuts , set aside

Place all dressing ingredients in a jar and shake well

Pour dressing over salad and serve .
