Zucchini fritters with feta cheese and dill

Ingredients




1/4 cup olive oil [extra oil may be needed]

3 eggs lightly beaten

3 spring onions finely sliced

1/2 teaspoon salt , to taste , may not need any cos of cheese

2 medium size zucchini, coarsely grated and moisture squeezed out using a tea towel

2 teaspoons minced garlic

200 grams crumbled feta cheese

2 tablespoons chopped fresh dill

1/2 cup plain flour

1 teaspoon baking powder



Method

In a large bowl mix all ingredients and using a heavy based frypan, heat the oil and place a tablespoon full of mixture and gently fry , cook on each side about 10-15 minutes , once cooked serve with sour cream and chilli jam [optional]
