Zucchini with Burrata and Pesto

Ingredients
4 tablespoons olive oil
3 tablespoons sundried tomato pesto
2 tablespoons lemon juice
1/2 tablespoon crushed chilli flakes or 1 teaspoon sweet paprika
1/4 teaspoon salt
2 large zucchini thickly sliced in 1/4 inch rounds
1 large burrata cheese ball
1 handful fresh basil leaves
Method
In a shallow bowl mix oil, salt and chilli flakes [or paprika] and coat the zucchini with this
Place in a baking dish and cook in oven for approximately 30 minutes ensuring you turn them over mid way through cooking
Place cooked and cooled zucchini on a platter spreading out evenly
Place the split burrata in the centre of the dish
Pour the pesto, mixed with lemon juice, over the zucchini and cheese and sprinkle the basil leaves over all the ingredients
